Egg and Avocado Breakfast Flatbread

INGREDIENTS:

  • 1 flatbread
  • 1 tablespoon olive oil
  • 1 pinch kosher salt
  • 1 california avocado (ripe, peeled and seed removed)
  • 1 teaspoon red pepper flakes
  • 8 cherry tomatoes (sliced)
  • 2 eggs (fried over easy)
  • salt
  • pepper

DIRECTIONS:

  1. Preheat oven to 375°F
  2. Place flatbread on a cookie sheet. Drizzle with olive oil and sprinkle with salt
  3. Bake for 8 minutes
  4. Mash the California avocado and red pepper flakes
  5. Once the flatbread has baked, spread avocado over it to the edges
  6. Top with sliced tomatoes and fried eggs
  7. Sprinkle with salt and fresh ground black pepper to taste
